Your spouse is non-EU, so her residency process will be different from yours. I suggest you read through the thread given below, as one of my posts there lists documents required by non-EU spouses of EU citizens for residency.

Hi, saw all these postings, I am a US Citizen and do things the American way, I have hired an Attorney specialized in International I did everything for me I can not remember the name but the law firm is at http://www.spain-usa.net

It is not cheap but is sure!!!
