Ecuador has plenty of hostels and hotels for each price range. To give you an idea, a bed in a shared room in a hostel costs around $10 USD per night and a double room in a comfortable three-star hotel starts around $60 USD per night. Most hotels are located in the historical centre and the La Mariscal, the modern centre with most restaurants and bars.

B&B

'Bed and breakfast" are not a common in Ecuador. In many cases, hosterías are a similar kind of small, homey accommodations. You find them mainly in the countryside, in the Andes Mountains, and rates for comfortable hosterías start around $50 USD per room per night, including breakfast and sometimes dinner.
